Owner / Founder - Cory

Before founding CoZi Wines, Cory owned and operated Chaumiere Longs Camps Winery in Guernsey, Channel Islands, and won best winemaker in the British Isles in 2014 by ReiseArt Culture & Tourism Ltd. He has also won several first and second place in several wine competitions in Europe.

Distraught over the heavy regulations which, in his mind, discouraged expressing the full potential of viniculture, he moved back to California in 2016 to take advantage of the Northern California climate and terroir.

He established CoZi Wines in order to produce prestigious and complex wines without pretentiousness, and without limit, ensuring they can be enjoyed by everyone.

Chief Consultant - Jade

Jade Hendry, Chief Consultant, has a BS in Viticulture and Enology from UC Davis. In addition to having an amazing pallet, she has a strong international wine presence and has worked harvests on both US coasts, as well as internationally in Australia and New Zealand. She has experience in experimental winemaking, cellars and wine labs.

Jade is an invaluable asset to CoZi Wines and always goes the extra mile to make sure consumers are getting the best nature has to offer by utilizing state of the art science and premium quality products. She half artist / half mad scientist, but all around wine master.

Her passions include family, cheerleading, pets, and the feel of grapes between toes.


Winemaker - Patrick Saboe

Patrick has an Enology & Viticulture degree from U.C. Davis. While attending Davis, Patrick worked at Robert Sinskey Vineyards and assisted Dr. Andy Walker in the Pierce’s Disease Resistance Rootstock Breeding Program. Upon graduation, he became Harvest Enologist for Hanna Winery before becoming the Assistant Winemaker at Keller Estate.

In 2006, Patrick became Winemaker and Vineyard Manager for Petroni Vineyards as well as Consulting Winemaker for Verismo Wines. In 2008, Patrick accepted the Director of Winemaking position at Pezzi King Vineyards.

Patrick’s winemaking philosophy is simple: exceptional wines are made from exceptional fruit with exceptional care. Consequently, he collaborates closely with the numerous growers who partner with The Wine Foundry, assuring that quality is paramount.

The Wine

"Cabernet Franc is one of the major black grape varieties worldwide. It is principally grown for blending with Cabernet Sauvignon and Merlot in the Bordeaux style, but can also be vinified alone, as in the Loire's Chinon. In addition to being used in blends and produced as a varietal in Canada and the United States, it is sometimes made into ice wine in those regions.

Cabernet Franc is lighter than Cabernet Sauvignon, making a bright pale red wine that contributes finesse and lends a peppery perfume to blends with more robust grapes. Depending on the growing region and style of wine, additional aromas can include tobacco, raspberry, bell pepper, cassis, and violets.

Records of Cabernet Franc in Bordeaux go back to the end of the 18th century, although it was planted in Loire long before that time. DNA analysis indicates that Cabernet Franc is one of two parents of Cabernet Sauvignon, Merlot, and Carménère."
